Indigeny Apple Pancakes with Cider Sauce

This is a two-part recipe for the pancakes and the cider sauce. This makes a great Sunday morning breakfast.

Ingredients

  • PANCAKES:
  • 2 cups Bisquick
  • ½ tsp. cinnamon
  • 1 egg
  • 1 1/3 cups milk
  • ¾ cups grated apples
  • CIDER SAUCE:
  • 1 cup sugar
  • 2 tbs. cornstarch
  • ¼ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2 cups Indigeny Hard Apple Cider
  • 2 tbs. lemon juice
  • ¼ cup butter

Instructions

  1. PANCAKES:
  2. Mix all ingredients except the apples.
  3. Beat the batter then stir in the apples.
  4. Cook ¼ cup mixture on lightly greased griddle.
  5. Flip when bubbly on top.
  6. Serve with Indigeny Hard Cider sauce.
  7. CIDER SAUCE:
  8. Combine first four ingredients in medium saucepan.
  9. Stir in Indigeny Hard Apple Cider and lemon juice.
  10. Cook, stirring constantly, until mixture thickens and boil one minute. Add butter and mix well.
